The Alberta Public Health Act Food Regulation states:

1. If five or less food handlers (including servers and bartenders) are working on the premises, then there must be at least one person who works for the establishment with a valid Food Handler Certificate. There is no obligation for the person holding the Food Handler Certificate to be present.

2. A person operating a commercial food establishment must, at any time when there are 6 or more food handlers working on the premises, ensure that at least one member of the management or supervisory staff of the commercial food establishment holds a certificate or equivalent document referred to in subsection (1) and that that individual is present at the commercial food establishment at the time.

The Alberta Food Regulation details requirements that a food establishment must follow to ensure prevention of health hazards and the protection of the public. The regulation  lists requirements regarding temperature control, maintenance, employee health & hygiene, cleaning & sanitizing, standards for equipment as well as record keeping tasks.

Like most Provinces the Alberta Food Regulation lists food handler training requirements as part of the legislation.

Alberta Food Safety Training Requirements

At least one person with an approved food safety certificate. The trained person may be absent when 5 or fewer food handlers, including wait staff, are working on the premises.

At least one person with an approved food safety certificate present when 6 or more food handlers, including wait staff, are working on the premises.
